Food: Trapani style rigatoni





I am all about quick and easy meals and this one is great as it's also as cheap as chips! (no chips involved in this recipe)



This is another one of the lovely Jamie Oliver's 30 minute meals, although I cut out the dessert and salad so it really only took me about 12 minutes - just the amount of time it took to boil the pasta.


Here is what you will need:
500g dried rigatoni
40g  parmesan cheese
100g whole blanched almonds
2 cloves garlic
2 fresh red chillies
1 large bunch basil
4 anchovy fillets
450g cherry tomatoes

1 ciabatta loaf
1 tsp dried thyme
olive oil

Method:
Pre-heat oven to 190 degrees.
Bring a pan of water to the boil, add pasta.

Place ciabatta in an oven-proof dish, drizzle with olive oil and sprinkle over the dried thyme. Place in oven.

While the pasta is cooking, blitz the almonds and cheese together until fine in a food processor.
Add the chillies, garlic, anchovies, basil and tomatoes. 
Blitz until smooth, then add a couple of glugs of olive oil.

When pasta is ready, drain and mix together with the paste.
Don't forget to take the bread out of the oven!
And serve.
