Day 3 - Mulled Wine

Christmas in a glass AKA mulled wine.
This is a fairly new tradition, we never had this at Christmas growing up, not sure why - it's ABSOLUTELY DELICIOUS!

Every year I try to make my own recipe but get a few bottles in just in case it goes horribly wrong!

This is the recipe I will be trying this year, another classic Jamie Oliver, you can't go wrong with a J.O!

You will need:
2 clementines
1 lemon
1 lime
200g caster sugar
6 whole cloves
1 stick cinnamon
3 fresh bay leaves
1 whole nutmeg for grating
1 vanilla pod
2 star anise
2 bottles Chianti or other Italian red wine

Peel large sections of the clementine, lemon and lime peel
Put sugar in a large saucepan over a medium heat
Add the peel, squeeze in clementine juice
Add cloves, cinnamon, bay leaves and 10-12 gratings of nutmeg
Add the halved vanilla pod and pour in just enough red wine to cover the sugar
Simmer until sugar has dissolved
Boil for 4-5 minutes until it turns into a syrup
Turn heat down and add star anise
Add the rest of the wine until its all warm and then serve.
